om Low graduated from The Ohio State University - College of Agriculture in 1979.   In addition to farming he started USA FOTO, Inc. providing collegiate sports photography services throughout the country for the past 35 years. 

   In 1994 Tom and Sherri married on the farm and continued to build their businesses together.  God blessed us with a wonderful daughter Nissa and added Dereck to our family as the son and brother we never had.  PRAISE GOD! These and many more blessing have come to us through our faith in Jesus Christ as our lord and savior.  What are your blessings?  Thank you God for all that we are and will be.

Alpharoma Hops Profile

DUAL PURPOSE - FLORAL; CITRUS & SPICY -  known for having a unique floral, spicy & citrus character with balanced bittering potential

Alpha Acid - 5.8%-10.9%  Beta Acid -  2.4%-4.8%  Total Oil - 0.98-1.52 mls/100 grams

AlphAroma Hops is a dual use hops with an alpha acid content of 5.8%-10.9%. This variety has a unique oil balance with highly abundant myrcene oil (44.3%-66.2%), lower than norm caryophyllene oil (3.4%-7.7%), and moderately high farnesene oil (3.2%-6.7%). This combination help to give AlphAroma its bold name.

 
 

Cascade Hops Profile

DUAL PURPOSE - FLORAL; CITRUS & SPICY -  known for having a unique floral, spicy & citrus character with balanced bittering potential

Alpha Acid - 5.5 - 9%  Beta Acid - 6-7.75%   Total Oil - .8-2.5 ml/100grams

Cascade is the most popular variety in craft brewing -  medium intense floral, citrus and grapefruit tones - Cascade (U.S.) hops is commonly used for both its aromatic qualities as well as its bittering qualities. 

 
 

 

Cashmere Hops Profile

DUAL PURPOSE - Smooth bitterness, herbal aroma, flavors of lemon, lime and melon 

Alpa Acid - 7.7%-9.1%  Beta Acid - 3.3%-7.1%  Total Oils - 1.2-1.4 mL/100g

Cashmere showcases flavors lemon, lime and melon, exhibits a smooth bitterness and is mildly aromatic with a subtle herbal bouquet.

 
  

Centennial Hops Profile

DUAL PURPOSE - floral flavor and aroma - Centennial hops is commonly used for both its aromatic qualities as well as its bittering qualities. 

Alpha Acid - 9.5 - 11.5%  Beta Acid - 3.5%-4.5%    Total Oil - 1.5-2.5 mls/100 grams

Centennial Hops was first created in 1974 and boasts an alpha acid rating of 9.5%-11.5%. It is sometimes referred to as a Super Cascade, however it is lighter on the citrus aromas. Centennial works undoubtedly well in Pale Ales and India Pale Ales, where some bottom line bitterness in beer is needed with the top end aroma. The floral flavor and aroma of this variety is evident in many commercial beers.

 
 
 

Chinock Hops Profile

DUAL PURPOSE - heavy aroma, and somewhat spicy bouquet - Chinook hops is commonly used for both its aromatic qualities as well as its bittering qualities.

Alpa Acid - 12%-14%  Beta Acid - 3%-4%  Total Oil - 1.5-2.7 mls/100 grams

Chinook Hops will add 12%-14% alpha acid content to your hops schedule. It is a dual purpose alpha variety, and is good for the beginning of the boil, or mid-additions in brewing. Chinook is popular in American style beers such as Pale Ale and India Pale ale, but extends itself well to Seasonal Ales, and darker beers including Porter, Stout, and Barley Wines. It has a heavy aroma, and somewhat spicy bouquet. Some piney and herbal notes will be evident in a fresh batch.


 
 

Comet Hops Profile -

BITTERING and AROMA - Strong grapefruit, dank resin flavors

Alpa Acid - 9.4%-12.4%   Beta Acid -  3%-6.1%   Totla Oils - 1.98 mL/100g

Comet’s flavor profile rests heavily on a strong accent of grapefruit. It does feature solid bittering capabilities and traditionally brewers considered it best suited as a bittering agent for American-style lagers. Recently however, there has been a surge in its use as a dry-hop in ales and IPA’s.

 
 

CTZ Hops Profile -

BITTERING and AROMA - HERBAL with CITRUS NOTES - CTZ stands for Columbus, Tomahawk, and Zeus. High on aromatic qualities, bittering scale and oil content.

Alpa Acid - 14 to 18%  Beta Acid - 4.5%-5.5%  Total Oils - 1.5-2 mls/100 grams

Creates a hop that is an interesting dichotomy of sharp and herbal.  Used in American IPAs & Pale Ales, Stout, Lager Features a punchy hoppiness and deep, pensive aroma with understated citrus notes—perfect as a dual use hop. Commonly used late in the boil and, when fresh, CTZ has a herbal flavor with a lemon citrus back note. 

 

Fuggle Hops Profile

AROMA - essence of herbal, woody, and fruit - used anywhere in the brewing process from the kettle to dry hop, and is most commonly associated with English style ales.

Alpha Acid - 4%-5.5%  Beta Acid - 1.5%-2%   Total Oil - 0.7-1.2 mls/100 grams

U.S. Fuggle Hops is an aroma hops with an alpha acid rating for 4.0%-5.5%. The essential oils vary in content compared to the English variety, and this definitely changes the flavor and aroma in beer. It still has the time-honored essence of English Ales, which has mild hoppiness, and a pleasant aroma with essence of herbal, woody, and fruit. U.S. Fuggle is a bit stronger than the English variety for better or for worse.


 
 

Sorace Ace Hops Profile

BITTERING and AROMA - Flavors of lemon citrus, orange, dill, cilantro

Alpha Acid - 11.5%-16%   Beta Acid -  6%-7.5%   Total Oil - 1.5-3 mL/100g

Sorachi Ace is considered excellent in several beer styles, particularly those desiring a distinct lemon citrus flavor. Some brewers have even reported flavors of orange, cilantro, dill and oak. Beer styles - Lager, Pilsner, Saison

 
 

Tahoma Hops Profile

AROMA - Subtle flavors and aromas of lemon citrus, orange, wood and spice

Alpha Acid -  7.2%-8.2%    Beta Acid - 8.5%-9.5%   Total Oil - 1.0-2.0 mL/100g 

Tahoma is the daughter of Glacier. With alpha content higher than its parent, Tahoma features very low cohumulone giving it a subtle, yet lovely lemon citrus aroma and flavor with undertones of orange, woodiness and spice.

WET HOPS RECIPE INFORMATION
 They are to be used immediately upon receipt and should not be stored.  

APPLICATION
Fresh Wet Hops are primarily used in late kettle additions and for dry hopping to provide a fresh hop character to beer.  

ADDITION PROCEDURE
Add Fresh Wet Hops to late additions or in post-fermentation for best utilization of the fresh hop aroma and flavor character.  They can be added to the brew loose, in mesh bags or in custom designed dosing systems.  

AVAILABILITY
Seasonal Fresh Wet Hops Availability - limited availabilty varies by variety - starts August thru mid-September - call for details.

USE RATE CALCULATIONS
Wet hop recipes require 3 to 6 times more hops than using traditional dry leaf hops or pellets.  Addition during early kettle boil to achieve average bitterness in high gravity wort/beer will typically lead to the extraction and isomerization of about 25% of the alpha acids in the finished beer.  Addition rate is calculated as follows:

kgA  =      BU x HL /2500
Where:    kgA = kg of alpha acids to add in the brew kettle
                 BU  =  the desired amount of bitterness units in the finished beer
                 HL   =  hectolitres of finished beer  (1 barrel = 1.1735 hectolitre)

  Use rates may vary depending on the brewing process and the desired hopping level.  

Addition during kettle boil to provide bitterness and/or aroma will be dependent on the time of the addition and the desired hop character in the finished beer.  Hop formulation and addition rates will be determined on a case-by-case basis.  Also, additional rates during or post-fermentation to reinforce aroma in beer will be determined on a case-by-case basis.
